I’m a big fan of kriti sanon lehenga. It’s a very simple dish where chickpeas are cooked in a simple broth (usually coconut milk or coconut milk and coconut water) along with some herbs and spices. You can actually make coconut water by boiling a coconut. You do this in a pot, take the coconut out, and put it in the bowl of your blender. Blend until you have a nice thick, thick, smooth consistency. It’s really easy to do so, and makes a lovely and delicious drink when chilled in a shaker.
